Gluten-free, low-sugar snacks

My mother has recently started the SPD, and she's celiac, so she can't have any gluten.  She also has a hard time eating sugary snacks on an empty stomach.  We're wondering if anyone has any snack suggestions.  She's tried stuff like the rice cake snack things, popcorn, etc. but is looking for more ideas.  Can anybody think of anything that would be good?

We corresponded off-line on this one, but to spread the word to others, here are some suggestions:
- leftover rice, potatoes, or other carbs including gluten-free pasta you had at another meal
- tortillas (corn)
- gluten-free crackers or pretzels that are available at stores or at http://glutensolution.com  or other gluten-free site
- gluten-free cereals
- beans

What are your favorite snacks that are low in Weight watchers points and sweet?

A client favorite is gluten-free oat bran or other high fiber creamy hot cereal with flavorings - it gives you high fiber to keep you feeling full but you get the sweetness to satisfy your sweet tooth.

1/3 oat bran (or other dry hot cereal)
1 cup water
dash of salt

Cook in microwave for about 3 minutes stirring every 45 seconds or so and watching to make sure it doesn't bubble over.  Add some of the following:

- 1 Tablespoon cocoa powder and 2 teaspoons sugar (optional 1 tsp flaked coconut)
-  1/2 teaspoon vanilla, 1/4 teaspoon ground cinnamon, and 2 teaspoons brown sugar
- 1 teaspoon peanut butter and 2 teaspoons honey
- 1 Tablespoon fat free caramel sauce and 1 teaspoon finely chopped walnuts

Use your imagination with sweetness and spice - enjoy!
